Bundaberg Soft Icing Mixture contains superfine milled sugar together with a small percentage of added starch giving it a softer setting texture making it more suited for use as soft, fluffy buttercream icing or cake filling.  (We recommend PURE icing sugar for royal icing).

It is a good all-round icing sugar to use particularly in buttercreams and baking mixtures such as sponge cakes and chiffon cakes.   The added tapioca starch (gluten free) helps avoid clumping of the icing sugar and it is easier to sift compared to pure icing sugar.  

Bundaberg Icing Sugars are widely considered amoungst Australian decorators, Cake Guilds and Associations to be the superior brand of icing sugar due to its superfine particles - ideal for piping when using small size tips such as #2 down to #000 tips.  The sugar was also tested to create a superior flower paste with a stronger structure than it's leading competitor.

(The 'other' leading brand of icing sugar in Australia has much larger particles that sometimes do not fully dissolve causing piping nozzle blockages with royal icing and buttercream.  When used to create flower paste the texture was inferior and its structure was weaker).
